I am new to Vista, and need advice on how to make the commandline Everest execute without the pesky Vista approval every time?

There's no real solution to that, since Vista simply alarm you that EVEREST requires administrator privileges to run properly. You can either:
1) Turn off UAC to get rid of those nagging messages
2) Keep UAC on, but remove EVEREST.EXE.MANIFEST file from EVEREST installation folder. That way Vista would not pop up the approval box, but you would lose all low-level features of EVEREST including temperature/voltage/fan monitoring, chipset information, SPD memory module details, GPU information, etc.

Is there no way I can "authorize" Everest? How about running it as an approved Service?

EVEREST cannot work 100% when running as a service, so we don't officially support that. You can try to hack it in, but I cannot assure you it would work properly.
